How to open EPS and PDF Files and Edit them.

Adobe Illustrator. In Design and Photoshop will open Eps, Ps, amd Pdf files, so will Corel Draw but less reliably.
What about the new Open Source Graphics Programs?
Well Inkscape (vector drawing package) will open PDF files created with Adobe products and allow you to edit them. It only really works with single page pdf's, which makes sense because Illustrator only supports single page documents. I have tested this many times and found that it works well. Inkscape also exports PDF and EPS files which open up in Illustrator. Inkscape won't however open EPS files.

Scribus (Desktop Publishing Free Open Source) will open EPS files and allow you to edit them. (Refer diagram) It will also allow you to export your changed document as a EPS or PDF file, even supporting the PDF-X3 CMYK industry standard. If you haven't tried these programs you should they are free and very good.
